March’s Spice: Cayenne Pepper

Cayenne peppers are closely related to jalapeño and bell peppers. They are a staple in Southwestern American, Mexican, Cajun, and Creole cuisine. Dried and ground, they make a powdered spice for seasoning and also feature whole in Korean, Sichuan, and other Asian cuisines.

Recipe: Spicy Hummus

INGREDIENTS

  • ¼ cup tahini
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon garlic
  • 1 teaspoon cayenne
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon sesame oil
  • 5 dashes hot pepper sauce
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 2 tablespoons cold water

DIRECTIONS

1. Combine tahini, olive oil, lemon juice, minced garlic, cayenne pepper, ground cumin, salt, sesame oil, and hot sauce in a food processor or blender.

2. Blend until very smooth, about 3 minutes.

3. Add garbanzo beans and blend for 2 minutes.

4. Add water and blend for 3 minutes more. For fluffier hummus, add 3-4 tablespoons of water instead of 2.
