February’s Spice: Chia Seeds

Chia seeds are the edible seeds of Salvia hispanica, a flowering plant in the mint family native to central and southern Mexico. Chia seeds contain antioxidants, minerals, fiber, and omega-3 fatty acids. These nutrients play a role in supporting multiple body functions and systems.

Recipe: No Bake Energy Bites

INGREDIENTS

  • 1 cup old-fashioned oats
  • 2/3 cup shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Stir all ingredients together in a large mixing bowl until thoroughly combined.
  2. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. (This will help the mixture stick together more easily.)
  3. Roll into mixture into 1-inch balls.
  4. Enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.
