February’s Spice: Coriander
Recipe: Coriander-Spiced Oven Fries
INGREDIENTS
- 3-4 large russet potatoes
- 2 tablespoons olive oil
- 2 teaspoons ground coriander
- 1 teaspoon dried thyme (optional)
- salt and pepper
INSTRUCTIONS
- Preheat the oven to 450 degrees
- Line 2 baking sheets with parchment paper or grease with cooking spray
- Slice potatoes into fries
- Toss the fries with olive oil, ground coriander, and dried thyme
- Arrange the fries on the baking sheets in a single layer
- Bake for 20 minutes
- Flip the fries and rotate the pans and bake for 20 more minutes or until the fries are golden brown and crisp
- Season with salt and black pepper and serve
