February’s Spice: Coriander

Recipe: Coriander-Spiced Oven Fries

INGREDIENTS

  • 3-4 large russet potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons ground coriander
  • 1 teaspoon dried thyme (optional)
  • salt and pepper

INSTRUCTIONS

  1. Preheat the oven to 450 degrees
  2. Line 2 baking sheets with parchment paper or grease with cooking spray
  3. Slice potatoes into fries
  4. Toss the fries with olive oil, ground coriander, and dried thyme
  5. Arrange the fries on the baking sheets in a single layer
  6. Bake for 20 minutes
  7. Flip the fries and rotate the pans and bake for 20 more minutes or until the fries are golden brown and crisp
  8. Season with salt and black pepper and serve
