Recipe: Crispy Frank’s RedHot-Spiced Chicken

INGREDIENTS

  • 20 oz chicken cutlets
  • 1 tbsp Frank’s RedHot® Original Seasoning
  • 1/2 cup panko breadcrumbs
  • 3/4 cup sour cream
  • scallions
  • salt and pepper
  • 2 tbsp butter
  • 6 tbsp blue cheese dressing

DIRECTIONS

  1. Pat chicken dry with paper towels; season with salt and pepper.
  2. Place butter in a shallow microwave-safe dish. Microwave until melted, 30 seconds. Stir panko, Frank’s RedHot, and a pinch of salt and pepper into melted butter.
  3. Brush 6 tbsp sour cream onto tops of chicken in a thin layer. Working one piece at a time, dip brushed sides of chicken into panko mixture, pressing to adhere (no need to coat the undersides).
  4. Place chicken, coated sides up, on a lightly oiled baking sheet. Roast on middle rack until browned and cooked through, 15-18 minutes. Transfer to a plate to rest.
  5. In a small bowl, combine blue cheese dressing, scallion whites, and 6 tbsp sour cream. Top chicken with blue cheese sauce and scallion greens.
