Spice It Up

May’s Spice: Harissa

Recipe: Lemon Harissa Chicken

INGREDIENTS

  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice
  • 2 tbsp rosemary
  • 2 tbsp paprika
  • 1-2 tbsp Harissa
  • 1 tsp salt and pepper
  • 4 boneless skinless chicken breasts, cut into 1.5 inch cubes

INSTRUCTIONS

  1. Combine olive oil, garlic, lemon juice, rosemary, paprika, harissa, salt, and pepper in a ziploc bag. Seal and mix the ingredients together.
  2. Add the cubed chicken. Refrigerate for 3-6 hours.
  3. Pour the chicken and marinade into a sauce pan and cook on medium for 8-10 minutes.
  4. Serve with roasted veggies and jasmine rice.
  5. Optional: Add a dollop of Greek yogurt over the chicken, and garnish with parsley, sliced olives, or capers.
