January’s Spice: Herbes de Provence

Herbes de Provence is a mixture of dried herbs considered typical of the Provence region of southeastern France. This blend contains savory, thyme, lavender, basil, and fennel. The herb mixture is typically used with grilled foods and stews.

Recipe: Vegetable Egg Rolls

INGREDIENTS

  • 1 large green pepper
  • 1 cup fresh green beans
  • 1 tablespoon olive oil
  • 1.75 cups shredded cabbage
  • 1 cup chopped fresh broccoli
  • 1 cup shredded zucchini
  • 4 teaspoons herbes de Provence
  • 1 teaspoon pepper
  • 14 egg roll wrappers

DIRECTIONS

  1. In a large skillet over medium heat, cook green pepper (cut into strips) and green beans in olive oil until tender.
  2. Add the cabbage, broccoli, zucchini, herbes de Provence, and pepper. Cook until vegetables are tender, 5-7 minutes longer.
  3. Place 3 tablespoons vegetable mixture in the center of an egg roll wrapper. Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal.
  4. Repeat with remaining vegetable mixture and wrappers.
  5. Place seam side down on a baking pan coated with cooking spray.
  6. Bake at 425° until golden brown, 20-25 minutes, turning once.
  7. Serve with sweet and sour sauce.
