September’s Spice: Southwest Seasoning
Recipe: Slow Cooker Southwestern Tacos
INGREDIENTS
- 1.5 lbs. boneless skinless chicken breasts
- 2 cups bell pepper strips
- 1.5 cups corn
- 2 tbsp. cider vinegar
- 2 tbsp. oil
- 2 tbsp. water
- 2 tbsp. southwest seasoning
- Tortillas
- Toppings: shredded cheese, salsa, avocado, sour cream, cilantro, green onions
DIRECTIONS
- Place chicken and vegetables in slow cooker.
- Mix vinegar, oil, water, and seasoning in a bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.
- Cook 6 hours on low or 3 hours on high, or until chicken is cooked through.
- Remove chicken from slow cooker and shred using two forks. Return to slow cooker; mix well with vegetables.
- Serve in warm tortillas with desired toppings!
