September’s Spice: Southwest Seasoning

Recipe: Slow Cooker Southwestern Tacos

 

 

 

 

 

INGREDIENTS

  • 1.5 lbs. boneless skinless chicken breasts
  • 2 cups bell pepper strips
  • 1.5 cups corn
  • 2 tbsp. cider vinegar
  • 2 tbsp. oil
  • 2 tbsp. water
  • 2 tbsp. southwest seasoning
  • Tortillas
  • Toppings: shredded cheese, salsa, avocado, sour cream, cilantro, green onions

DIRECTIONS

  • Place chicken and vegetables in slow cooker.
  • Mix vinegar, oil, water, and seasoning in a bowl until blended. Pour over chicken and vegetables; stir to coat. Cover.
  • Cook 6 hours on low or 3 hours on high, or until chicken is cooked through.
  • Remove chicken from slow cooker and shred using two forks. Return to slow cooker; mix well with vegetables.
  • Serve in warm tortillas with desired toppings!
