March’s Spice: Turmeric

Recipe: Spiced Skillet Pork Chops with Turmeric Sauce

INGREDIENTS

  • 13.5 oz. can coconut milk
  • 1 shallot
  • 2 cloves garlic
  • 1-inch piece fresh ginger
  • 1 tbsp. honey
  • 2 tsp. turmeric
  • 4 boneless pork loin chops
  • 1.5 tsp. coriander
  • 1 tsp. cumin
  • 3 tbsp. fresh cilantro
  • salt and pepper
  • vegetable oil

INSTRUCTIONS

  1. Coarsely chop shallot, garlic, ginger, and cilantro.
  2. In a blender, purée the coconut milk, shallot, garlic, ginger, honey, and turmeric until smooth; set aside.
  3. Pat the pork chops dry on a cutting board lined with paper towels.
  4. In a small bowl, stir together the coriander, cumin, and 2 tsp. salt. Season the pork chops all over with the spice blend.
  5. Heat a skillet over medium-high heat. Add oil, and continue to heat until the oil slides across the pan easily. Arrange the chops in the pan and cook undisturbed for 4 minutes. Flip and cook about 4 minutes more. Transfer the chops to a plate and tent with foil.
  6. Pour out any excess fat from the pan, and return the pan to medium-low heat. Pour the coconut milk mixture into the pan, season with salt and pepper, and cook, stirring, until reduced and thickened, about 5 minutes.
  7. Pour any juices from the resting pork chops into the pan, and stir until heated through, then stir half of the cilantro into the sauce.
  8. Serve the pork chops sprinkled with the remaining cilantro and the sauce on the side.
